The mix

+ 50ml – 60ml barrel-aged gin
+ sugar cube
+ tsp water
+ 2-3 dashes of bitters
+ orange or lemon peel

The make

• Place sugar, bitters and water in glass and muddle until dissolved
• Add 4-5 cubes of ice and stir until you have a little dilution happening
• Add 15ml Gin, a few more ice cubes and stir for 10 seconds
• Repeat, 15ml Gin, more ice and stir
• Keep repeating and taste as you go to achieve perfect dilution
• Add garnish
