Our new Goldfields Rum has been shaped over six slow years in small ex‑Bourbon and ex‑Rye Whiskey barrels that were once filled with maple syrup. The casks leave their mark from the first breath - spice, maple and oak rising warmly from the glass. Demerara sugar, vanilla and allspice follow in a smooth, unfolding palate, before a long, woody finish settles in with brown‑butter richness. Consider it rum with a quiet glow: layered, inviting and made for moments worth lingering over.
