Following tradition where we could and making it up when we couldn't this Old Tom gin is true to character having spent some time in a barrel being driven round in our van to capture old-time delivery methods on a horse cart. Less spicy than a lot of today’s gins, our Old Tom has hints of toast and caramel that come from the malted barley, a gentle note of juniper with cassia root, citrus and a slight sweetness that rounds off the flavour.
